Preparation
1. Begin by washing the dondakaya thoroughly and peeling it. Cut it into half-inch thick rounds.
2. In a large bowl, add the chopped onions, tomatoes, garlic, ginger, and green chili. Blend them together to make a smooth paste.
3. Heat the oil in a pan over medium heat. Add the cumin seeds and let them splutter.
4. Add the asafoetida and the chopped onions to the pan. Sauté until the onions turn golden brown.
5. Add the ginger-garlic paste and cook for another 2-3 minutes until the raw smell disappears.
6. Add the chopped tomatoes and cook until they are soft and the oil starts to separate.
7. Now, add the turmeric powder, red chili powder, coriander powder, amchur powder, and salt. Mix well and cook for a few minutes.
8. Add the dondakaya rounds to the pan and cook for about 5 minutes until they start to soften.
9. Reduce the heat to low and cover the pan with a lid. Cook for another 10-15 minutes, stirring occasionally, until the dondakaya is completely cooked and the curry has thickened.
10. Finally, add the garam masala and mix well. Cook for another minute.
