How to Prepare a Boston Butt to Smoke

Smoking a Boston butt is a classic way to prepare a flavorful and tender pork shoulder. This cut of meat is perfect for smoking due to its high fat content and connective tissue, which breaks down during the cooking process to create a juicy and tender result. Whether you’re a seasoned pitmaster or a beginner, here’s a step-by-step guide on how to prepare a Boston butt to smoke.

1. Select the Right Boston Butt

To start, you’ll need to select a high-quality Boston butt. Look for a meaty shoulder with a good amount of fat, as this will contribute to the flavor and tenderness of the final product. The ideal weight for a Boston butt is between 8 to 12 pounds.

2. Trim the Fat

Once you have your Boston butt, trim off any excess fat, leaving about a quarter-inch of fat on the meat. This will help to keep the meat moist during the smoking process. Be sure to leave the skin on, as it will add flavor and help the meat to stay moist.

3. Season the Meat

Prepare a dry rub or a marinade to season your Boston butt. A dry rub typically consists of a mix of spices such as paprika, salt, pepper, garlic powder, and onion powder. Rub the mixture all over the meat, ensuring that it’s well-coated. Alternatively, you can marinate the meat in a mixture of your choice for several hours or overnight to allow the flavors to penetrate the meat.
