– 1 cup of red wine
– 2 cups of chicken or vegetable broth
– Salt and pepper to taste
– 1 teaspoon of ground cumin
– 1 teaspoon of ground oregano
– 2 bay leaves
– A pinch of sugar (optional)

Instructions

1. Heat the oil in a large pot over medium heat. Add the chopped onion and cook until it is translucent, about 5 minutes.
2. Add the minced garlic to the pot and cook for another minute until fragrant.
3. Add the chili paste to the pot and stir well to combine. Cook for another 2 minutes.
4. Add the diced potatoes and corn kernels to the pot, and cook for about 5 minutes until the potatoes start to soften.

8. Add the chicken or vegetable broth, salt, pepper, ground cumin, ground oregano, and bay leaves to the pot. Stir well to combine.
9. Let the carapulcra simmer for another 45 minutes to 1 hour, or until the meat is tender and the flavors have melded together.
10. If desired, add a pinch of sugar to balance the flavors. Continue to simmer for another 5 minutes.
11. Taste the carapulcra and adjust the seasoning if necessary. Remove the bay leaves before serving.
